We present a home-style version of a drink featured on our latest cocktail list. Designed as a large-volume pre-mixed that is bursting with the flavours associated with festive period, making it excellent for your festive gathering. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or for additional servings of bikinis.
Bikini Recipe
Yields 10 people
To make the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Cocktail (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Combine the listed ingredients in a saucepan, bring to a simmer, stirring to dissolve. Then, take off the stove allowing it to cool fully. Decant into an clean bottle, close it keeping it in the fridge, where it will keep for up to a month.
To make Cocktail Base: Combine all the liquid ingredients in a sizeable container, let it rest for an hour, then strain best through cheesecloth, to ensure it's fully clarified.
To serve: Measure 85ml of the premix into your stirring glass filled with ice, and stir gently for about 60 seconds to chill. Filter to a cold coupe glass or similar, top with a few cranberries and complete it by giving it a light spray with the mandarin essence over the top.
